The Yuzu Salt version of Seto Shio is the one built around Kochi Prefecture’s most prized citrus — yuzu, the Japanese citrus fruit whose fragrance is more important than its juice, and whose aromatic quality has made it a fixture of Japanese cuisine from hot pot to ponzu to bath salts.
Befco uses actual Kochi-grown yuzu in the seasoning, which is where most of Japan’s best yuzu comes from: the mountainous Shikoku climate producing a fruit with a particularly concentrated and complex fragrance.
The seasoning is more layered than the name suggests.
Alongside the yuzu and Seto no Honjio salt, the formulation includes katsuobushi extract powder, kombu extract powder, and chenpi (chinpi) — dried mandarin orange peel, a traditional Chinese and Japanese ingredient used in herbal medicine and cooking for the additional citrus depth and faint bitterness it contributes.
Lemon juice powder adds brightness; red chili adds a faint background heat that is present but not assertive.
The result is a yuzu flavor that is aromatic and citrus-forward, with a dashi umami underneath from the bonito and kombu that gives it more complexity than a straightforward citrus salt would produce.
The shrimp worked into the dough provides the same base umami as in the Shrimp Salt version — a quiet seafood note that sits underneath the yuzu aromatics without competing with them.
The cracker is the same fried format: light, sakkuri, and dissolving cleanly at 28 kcal per piece.
