Befco Seto Shio Fried Rice Cracker Shrimp Salt

Seto Shio is Befco’s fried rice cracker line built around a specific salt: Seto no Honjio — a natural nigari-bittern sea salt developed by Ajinomoto, harvested from the waters of the Seto Inland Sea.

The name means “genuine salt of the Seto,” and the mineral profile it carries from the inland sea’s waters is what distinguishes it from a standard refined salt: softer, more rounded, with a trace mineral depth that allows it to enhance flavor without the sharpness of a heavily sodium-forward seasoning.

The Shrimp Salt version adds small shrimp worked directly into the dough alongside the salt — a construction that gives the seasoning two layers of shrimp character rather than one.

The shrimp built into the dough provide a base umami that runs through each piece; the seafood extract powder and shrimp-derived flavoring in the outer seasoning add the aromatic, surface-level shrimp fragrance that arrives immediately on the first bite.

The two elements work at different depths, which is what gives the flavor more complexity than a single-source shrimp seasoning would produce.

The cracker is fried rather than baked — a lighter, airier fry than a dense kaki no tane style cracker, producing the “sakkuri karatto” texture that Befco describes as the format’s defining quality: crisp on first contact, dissolving quickly, and light enough that the shrimp and salt flavors are not competing with a heavy base.

At 27 kcal per piece, the format is calibrated for continuous snacking rather than portion control.
