Koikeya Pure Potato Chips Okhotsk Salt & Rock Salt

Koikeya lists the salt ratio on the ingredient panel: 50.4% Okhotsk sea salt, 49.6% rock salt.

That precision is the product. Two salts, near enough evenly split, chosen because they do different things — and with a chip this plain, the salt is not a background detail but the entire seasoning.

Okhotsk salt comes from the sea off northeastern Hokkaido, produced by direct-flame evaporation, a slow method that leaves the mineral profile intact and yields a rounder, gentler salinity with a faint sweetness behind it.

Rock salt does the opposite: mined rather than evaporated, it lands sharp and clean, and Koikeya’s own word for the effect is kiritto — crisp, bracing, cutting through.

One softens, the other sharpens, and between them the potato flavour has nowhere to hide.

Which is the point of Pure Potato.

Koikeya made Japan’s first mass-market bagged chips in 1962, and this line is where the company argues for the potato itself — 100% Japanese-grown, non-GMO, cut thick and fried so each slice breaks with a dry sakutto snap rather than shattering.

On the salted version there is no seasoning powder to hide behind.

What you taste is fried potato and two kinds of salt, which is either the simplest thing in the range or the most demanding, depending on how you look at it.
