Mentaiko — spicy salted pollock roe — and mayonnaise are a pairing that shows up across convenience store onigiri, pasta, toast, and countless other applications precisely because the two work so well together: the sharp, spicy brininess of the roe and the creamy richness of the mayonnaise balance each other in a way that neither achieves alone.
Applied to the crisp fried squid base of Ika No Sugata Age, the combination adds a third layer of umami — the squid underneath, the mentaiko seasoning in the coating, and the rounded creaminess of the mayonnaise powder pulling it all together.
The heat from the mentaiko is present but measured: a mild, pleasant spice rather than the direct chili heat of the Hot Chili version, building gradually and leaving a lingering warmth rather than an immediate hit.
This is a collaboration with Kanefuku, one of Japan’s most established mentaiko producers, based in Fukuoka where the best-known Japanese mentaiko originates.
The involvement of an actual mentaiko maker rather than a generic seasoning supplier shows in the flavor — more specific and more convincing than a straightforward powder seasoning would be. Four pieces to a bag, and considerably harder to stop at one than the bag size might suggest.
