Miyakojima is an island in the southern reaches of Okinawa Prefecture, surrounded by water of a particular clarity and color that photographers travel considerable distances to document.

It is also, less famously but no less importantly, the home of Yukishio — snow salt — one of Japan’s most distinctive sea salts, drawn from the waters around the island and processed into a fine, mineral-rich powder that carries the sea in a form delicate enough to disappear into a cookie without losing what it is.

Langue de chat — the thin, crisp French butter cookie whose name means “cat’s tongue” — is, by design, a vehicle for restraint. It snaps cleanly, melts quickly, and asks the ingredients within it to do the work.
