Bourbon Langrace Langue De Chat Cookies

Langrace is what happens when Bourbon applies the Lumonde manufacturing method to a langue de chat dough and coats the result in chocolate.

The Lumonde method — developed for Bourbon’s long-running crepe-style cookie — produces a thin, layered biscuit with a specific texture that sits between a crepe and a wafer: immediate crunch on first bite, then a rapid, clean dissolution that leaves no heaviness behind.

Applied to langue de chat dough rather than crepe batter, the result is slightly more substantial — more zakuzaku than the crispness of a standard langues de chat, with the layering visible in cross-section.

The chocolate coating is the differentiator from Lubera, Bourbon’s butter-rolled langues de chat.

Where Lubera uses no chocolate and lets the butter and almond dough carry the flavor entirely, Langrace wraps each piece in a smooth milk chocolate coating built on cocoa powder, whey powder, and sweetened condensed skimmed milk — a darker, richer direction that makes each piece feel more like a chocolate confection than a plain butter biscuit.

Reviewers consistently describe the coating as mellow rather than assertive, working with the langue de chat’s natural dairy quality rather than overwhelming it.

Eleven individually wrapped pieces per bag. The version that tends to appeal to people who find Lumonde a little too delicate and want something that leads with chocolate first.
