Yuraku Almond Thunder Chocolate Bar

Almond Thunder uses almonds three different ways.

Roasted almonds go in whole for a dry, hard crunch; almond praline — almonds caramelised in sugar and ground — brings a toasted, burnt-sugar sweetness; and almond paste adds the smooth richness that neither of the other two can.

The three are doing separate jobs, and the result is an almond flavour with more range than a bar of this size usually manages.

There is coffee powder in it too, which the pack calls a hidden ingredient.

Coffee does to chocolate what salt does to caramel: a trace of bitterness sharpens the sweetness and pulls the whole thing into focus.

It is a small quantity, well down the ingredient list, and the point is depth rather than a coffee flavour of its own.

The Thunder format gives the rest.

Cocoa cookie pieces and wholemeal wheat flour go into the compacted biscuit core, coated in chocolate, producing the zakuzaku break that Black Thunder has traded on since Yuraku Seika launched the bar in 1994. 19 g, 103 kcal, with a 240-day shelf life.
