Koikeya Sweet & Spicy Karamucho Potato Chips Yangnyeom Sauce Chicken

Yangnyeom chicken is the Korean fried chicken coated in a glossy red sauce built from gochujang, garlic, soy and sugar — sweet first, then the chilli, then a long savoury finish.

It has spread well beyond Korea over the past decade, and in Japan it is now a standard izakaya and delivery item rather than a foreign novelty.

Koikeya has put that sauce onto a potato chip.

The name says amakara mugen, sweet-hot infinity, and the loop is the proposition: the sweetness pulls you back after the heat and the heat cuts the sweetness, so neither one tires out.

Meat extract seasoning carries the savoury weight, powdered vinegar supplies the acidity that gochujang sauces need, and powdered soy sauce rounds it off.

The chicken flavour is there as the dish it is imitating rather than as a seasoning on its own.

This one is cut as chips rather than the sticks of the standard Karamucho — paripari, a thinner, lighter crispness that suits a sauce-based flavour better than a dense baton would.

The potatoes are 100% Japanese-grown and non-GMO.

Karamucho has been Japan’s benchmark spicy snack since 1984, and the trio of elderly women on the bag have been there from the start.
