Where the Black Pepper flavor is built on a single prominent seasoning that arrives with fragrance and warmth, the Consomme is assembled from a longer list of quieter elements working together: onion powder, sweet corn powder, multiple spices, soy sauce powder, roasted soy sauce seasoning, and yeast extract powder, layered in a way that produces the rounded, savory warmth associated with consomme without any single ingredient announcing itself distinctly.
The roasted soy sauce seasoning is the element Bourbon describes as the hidden flavor — “kakushi aji” — that gives the consomme its depth.
Roasted soy sauce has a more complex, slightly caramelized character than standard soy sauce, with less of the sharp fermented edge and more of the warm, brown note that comes from heat exposure.
