The salt is rock salt from Lorraine, the region in northeastern France where deposits sit deep underground rather than being evaporated from seawater.

Mineral-rich and comparatively mild, it carries a slower, rounder salinity than sea salt, and Morinaga works it into the cookie dough so the savoury note is baked in rather than sprinkled on.

Against it sits a sweet-tart lemon cream.
