Usuyaki Tabekko Dobutsu Curry is built on two things meeting: fifteen selected spices, and Gouda cheese worked into the dough itself.
The curry is the spice-forward kind rather than the mild roux Japan usually means by the word — Ginbis is chasing spice curry, the style that has swept Osaka and Tokyo over the past decade, where whole spices lead and the heat is aromatic rather than thick.
The Gouda sits underneath it, and that is the clever part: the cheese’s mellow richness gives the spices something to push against, so the stimulation reads as depth rather than as sharpness.
The biscuit is baked to roughly half the usual thickness, which Ginbis describes as the thinnest in the brand’s history.
That changes the eating entirely.
A thin biscuit releases its seasoning on contact instead of letting it build, and it breaks with a light, snappy crispness — Ginbis calls the result snacky, closer to a crisp than to a biscuit, which suits a savoury flavour far better than the original Tabekko Dobutsu build would.
The animals are unchanged.
Tabekko Dobutsu has been a fixture of Japanese childhood since 1978 — animal-shaped biscuits with each animal’s English name printed in capitals, which is how several generations here met their first English vocabulary — and the shapes carry over into this savoury, adult-leaning edition without alteration.
