The Hitotsumami Shrimp Black Pepper Mini Pack is the peanut-free version of Iwatsuka’s shrimp and pepper cracker, in a single 35 g bag rather than individually wrapped pieces.
What is left is the cracker itself, uninterrupted — rice, shrimp and black pepper, with nothing breaking up the bite.
The flavour works on two timescales, which is why Iwatsuka calls it W no umasa, a double savouriness.
Shrimp is worked into the rice dough, so it builds the longer you chew rather than announcing itself at once.
Black pepper sits on the outside, sharp and lingering, and the company’s word for that is atobiku — a taste that keeps pulling you back.
The texture is zaku-zaku: a coarse, fragmented crunch rather than a clean snap.
Hitotsumami means a pinch, the amount taken between finger and thumb.
Iwatsuka Seika has worked with nothing but rice since 1954 from its base in Niigata, Japan’s rice country, and the company’s stated principle is that good senbei begins with good rice — it runs its own farming operation on that basis.
At 35 g this is one bag for one sitting. Beer is the natural partner; black pepper and shrimp is a pairing izakaya menus have relied on for years.
