Calbee Kataage Potato Chips Grilled Corn

Yaki-tomorokoshi is a festival food, and that is the memory this chip is reaching for.

Sweetcorn grilled over charcoal and basted with soy sauce is a fixture of Japanese summer festival stalls — the soy caramelises against the heat, the corn’s own sugars catch, and the smell carries down the whole street.

Calbee builds the seasoning from powdered soy sauce and corn powder, with garlic and butter powder underneath, and describes the effect as a seasonal memory returning as you chew.

The chew is the point of Kataage.

Kataage means hard-fried, and Calbee fries these slices slowly at a lower temperature than a standard crisp, which drives off more moisture and produces something genuinely hard rather than merely crisp — closer to a kettle chip, but harder still.

Calbee prints a warning on the pack: not suitable for children under four, and chew thoroughly to avoid injuring the mouth. It is unusual for a potato chip to need one.

That density is also why the flavour works.

A thin crisp carries seasoning on the surface and surrenders it immediately; a Kataage slice holds it against something substantial, so the soy and corn build across several bites rather than arriving all at once.

60 g to a bag, with potatoes from Japan or the United States depending on the season.
