Zen-Noh Kumamoto Marron Milk Candy

Marron Milk Candy is made with a named chestnut variety, which is unusual for a sweet at this price.

The chestnuts are Mikuri from Kumamoto — a large-fruited Japanese cultivar valued for pronounced sweetness and a strong aroma, harvested over a narrow window from late September to late October.

Zen-Noh Shokuhin turns them into a paste and builds the candy around it.

Kumamoto is chestnut country.

The prefecture sits on volcanic soil in central Kyushu with the temperature swings that waguri — the Japanese chestnut, Castanea crenata — needs to develop its starch and sweetness, and it is consistently among the country’s largest producers.

Waguri is starchier and less sweet than the European chestnut, with a clean, faintly earthy flavour that can read as dry on its own.

Dairy is what fills that out, and here it is fresh cream rather than milk powder — third on the ingredient list, ahead of the chestnut paste itself.

Japanese confectioners pair chestnut and cream constantly, in Mont Blanc and in the chestnut desserts that fill patisserie cases from September, and in a hard candy the slow dissolve gives the chestnut time to come forward rather than being lost behind the sweetness.

Individually wrapped, 50 g to a bag, with a twelve-month shelf life.
