Tohato Amijaga Potato Snack Smoked Cheese

Smoked cheese is built from two cheeses doing different jobs.

Gouda carries the body — nutty, slightly sweet, the Dutch cheese that smokes better than almost any other — and cheddar brings the sharpness that keeps it from going soft.

Over the top goes smoke flavouring, which is where the kunsei character comes from, and Tohato’s own description is otona no ajiwai, a grown-up flavour rather than a children’s cheese snack.

The shape is the brand’s signature.

Ami means net, and Amijaga is waffle-cut into a lattice — a grid of holes through a thick slice, which multiplies the surface area so the piece crisps all the way through instead of staying dense.

It gives the zakutto break Tohato builds the product on, and it holds a heavy seasoning better than a flat crisp would.
