Umaimon means good things to eat, and Tohato uses the line to take a regional speciality and put it on its potato rings.
This one goes to Hakata, the old merchant quarter of Fukuoka, where mentaiko is the single food the city is known for — pollock roe cured with chilli, introduced from Korea after the war and made Fukuoka’s own within a generation.
What mentaiko gives is salt, a fine granular texture and a chilli heat that builds rather than hits.
Tohato uses karashi mentaiko powder made in Hakata itself, with cheese powder and fish sauce underneath — cheese because mentaiko needs fat behind it, which is why mentai cheese has become a standard pairing in Japanese cooking.
Nagewa means ring toss, and the rings are thin enough to wear on a fingertip, breaking with a light shattering sakusaku rather than a dense snap.
Tohato has made confectionery in Japan since 1952. 51 g to a bag, 280 kcal.
