Fettuccine Gummy Shine Muscat White Soda pairs two things Japan takes seriously.
Shine Muscat is the premium table grape developed in Japan over three decades of breeding and released in 2006 — seedless, edible-skinned, intensely aromatic, and expensive enough that a single bunch is a legitimate gift.
Its flavour is floral and perfumed rather than simply sweet, closer to a muscat wine than to the Concord-style grape most sweets reach for.
White soda is the other half, and it needs explaining outside Japan.
Howaito sōda is the creamy, milky-sweet soft drink flavour that Calpis and melon soda with a scoop of ice cream both belong to — soda with a dairy roundness to it.
Bourbon uses that to soften the muscat’s aromatic sharpness, and the result is a balance between sweetness and acidity rather than either one leading.
The shape is Bourbon’s signature.
Each piece is rolled flat and wide like the pasta it is named for, giving a springy al dente chew that a thick gummy cannot produce and far more surface for the sour powder coating every strand.
This is a 47 g bag — slightly smaller than the standard Fettuccine Gummy flavours at 50 g.
