Komeno Chips is Bourbon’s rice chip — a non-fried snack made from uruchimai (Japanese short-grain rice) flour combined with corn grits, baked slowly until the dough sets into the particular texture that Bourbon describes as “overwhelming kari” — an immediate, clean crispness that is noticeably sharper and more definitive than a fried chip’s softer crunch.

The non-fried production method is what produces this quality: oil-frying introduces moisture into the chip’s structure as it cooks; baking without oil leaves the starch structure drier and more rigidly set, which is why the crunch is more pronounced and lasts longer through the piece.

At 118 kcal per 30g bag and 1.4g of fat — the low fat content being a direct result of the non-fried method — the chip occupies the space between a rice cracker and a corn chip: lighter than either in terms of fat, with the neutral, slightly sweet character of rice flour as its flavor foundation.
