Langue de chat — literally “cat’s tongue” in French — is a thin, crisp wafer biscuit made from a butter-egg-flour batter, baked until the edges are golden and the center stays pale.
Bourbon’s Lubera takes that format and rolls each piece into a slender tube while still warm from the oven, a step that changes the eating experience from a flat snap into something that gives a little as you bite through it before crisping up and dissolving.
The dough is built with a generous amount of butter alongside margarine, maltose, sweetened condensed skimmed milk, and almond powder — a richer base than most langues de chat attempt, and the source of the mellow, rounded flavor that Bourbon describes as “maroyaka”: smooth and soft-edged rather than sharp or sweet.
The almond powder adds a quiet nuttiness that sits underneath the butter without competing with it, and the condensed milk brings a faint caramel warmth that appears only at the finish.
The texture is the defining quality: light and sakkuri — a Japanese word for a crunch that is immediate and clean, without hardness — with the structural quality of a thin rolled wafer that holds its shape until it meets your tongue.
Each piece is about 5.2g, sized to eat one at a time, and the kind of biscuit that is easy to finish in one sitting without intending to.
Eight pieces per pack, from Bourbon’s Biscuit Series lineup — one of the quieter products in a range that has been making Japan’s most consistent everyday biscuits since 1924.
