Bourbon Mini Lumonde Crepe Cookies Custard

Bourbon did not develop this flavour alone.

Mini Lumonde Custard is supervised by Monteur, a Saitama company that is one of Japan’s biggest makers of chilled cream pastries, and the specific target is Monteur’s best-known product: the Milk and Egg Cream Puff, a fixture of Japanese convenience store refrigerators.

The brief was to take a cold, soft, cream-filled choux and render it as a dry biscuit.

What carries it across is custard, which in Japan means something particular — egg-forward and milky rather than richly vanilla, the flavour of cream puffs and pudding cups rather than of crème brûlée.

Bourbon fills the layered crepe cookie with that, and the toasted, faintly caramelised flavour of the baked crepe stands in for the choux shell. Egg and milk lead; the biscuit’s own kōbashisa, its toasted aroma, sits behind them.

The format is the same as the rest of the Mini Lumonde line: small single-bite sticks of tightly rolled crepe, light enough to collapse the moment you bite, individually wrapped in a family-size bag.
