Mont Blanc is autumn’s flagship dessert in Japan, and it has been for the better part of a century.
The cake arrived from France in the 1930s, took the name of the mountain it was modelled on, and was then quietly rebuilt around Japanese ingredients until it became something local — chestnut cream extruded in fine threads over whipped cream and sponge, sold in every patisserie and convenience store from September onwards.
Bourbon has been translating that cake into biscuit form here, and the chestnut it uses is waguri from Kumamoto.
Waguri means Japanese chestnut, Castanea crenata, native to these islands and eaten here since the Jomon period — thousands of years before rice arrived.
It is larger and starchier than the European chestnut, with a restrained, clean sweetness, and it is notoriously difficult to process because the inner skin clings to the nut and has to come off by hand.
That difficulty is why waguri sweets cost what they do, and why the word on a Japanese package functions as a mark of quality rather than a simple ingredient listing.
Bourbon works chestnut powder into the cream, with skimmed milk powder and creaming powder supplying the dairy roundness of the Mont Blanc’s cream layer, and a small measure of cocoa powder adding the darker edge that keeps the whole thing from turning cloying.
The sticks are the Mini Lumonde size, roughly two-thirds the weight of a full-size Lumonde — single-bite rather than two-bite, and tightly rolled so the crepe layers collapse all at once against the soft cream.
At 4.8 g and 24 kcal each, they are built for the steady one-after-another grazing that the large-bag format invites.
Individually wrapped in a 121 g bag, the cupboard-at-home format rather than a gift. Good with black coffee or roasted green tea.
