Bourbon Sharimoni Gummy Candy Yogurt

Sharimoni Gummy is named after two textures hitting in sequence.

Shari is the granular crunch of the sour powder on the outside — closer to sugar crystals than to the fine dusting most sour gummies use — and moni, from mochi-muni, is the dense, springy chew underneath.

Bourbon’s own phrase is shakitto mo ni mo ni shokkan wēbu, a wave of texture, and the product is built around that transition rather than around any one mouthfeel.

The flavour is yogurt, which in Japanese confectionery means something specific: the tangy, lactic sweetness of drinking yogurt rather than the sourness of plain yogurt.

What makes it worth noting here is that the ingredient list contains no dairy at all.

The tang comes from acidulant and flavouring, and what is in the bag is bifidobacteria — a billion of them per 57 g bag, in killed form, as powder.

Bourbon prints the count on the front.

The colour comes from carotene, a plant pigment, and the ingredient list runs short for a gummy: sugar, starch syrup, gelatin, bifidobacteria powder, and the processing aids.

Bourbon has built Sharimoni Gummy as one of its two gummy brands alongside Fettuccine Gummy, and where Fettuccine goes for a flat ribbon and an al dente chew, this one goes for contrast between coating and core.
