Kataage began in November 1993 as an experiment in making a potato chip for adults, launched quietly in Hokkaido alone.
The bet was that Japanese snackers would trade the airy lightness of a standard chip for something harder, denser, and slower: thick-cut potato slices fried gently in the kettle style until they take on a crunch that has to be chewed through rather than crushed.
The bet took twelve years to win — nationwide release came only in 2005 — but the result is one of the most respected chips in Japan, unchanged in its defining hardness for three decades.
With a flavor this minimal, every ingredient is visible.
The list is nearly the shortest a seasoned chip can have: potatoes, oil, salt, and two umami powders.
The salt is the headline — 100% sea salt produced in the Setouchi region, the calm inland sea whose salt works have supplied Japanese kitchens for centuries.
Calbee grinds it to a particle size tuned specifically to this chip’s rough, blistered surface, so the salinity keeps releasing evenly to the final chew instead of front-loading on the first.
Beneath the salt runs the detail that makes this “lightly salted” chip taste distinctly Japanese: a double layer of kombu kelp and katsuo bonito extracts — the two pillars of dashi — folded into the seasoning.
You will not identify them as flavors. You will notice only that the potato tastes deeper than salt alone can explain.
