This flavor was not invented in a Calbee test kitchen. It was voted into existence.
Kataage maintains an official fan community in Japan — the Kataage Potato Ōenbu, some 58,000 members strong — and in 2026 Calbee asked them a single question: what flavor would go best with beer?
From 675 submitted ideas, negi shio dare won, and the package carries the fan club’s icon as proof of its origins. Released in June 2026 as a limited-time flavor, it is the rare chip designed by the people who eat it.
Negi shio dare is izakaya and yakiniku vocabulary: the salt-based scallion sauce — chopped green onion, sesame oil, garlic, a squeeze of citrus — most famously heaped onto grilled beef tongue, where its sharp freshness cuts the richness of the meat.
It is one of the definitive beer flavors of Japanese dining, which is precisely why the fans chose it.
The chip delivers the sauce in the right order.
Opening the bag releases the negi aroma first, green and appetizing.
The sesame oil and garlic arrive on the first bite, warm and toasty against the salt.
And underneath sits the detail that makes it read as yakiniku rather than mere onion: a current of beef umami, the flavor of the meat the sauce was always meant to accompany.
As with every fan-favorite pairing in this lineup, the thick-cut, kettle-fried base is what makes it work for drinking.
The hard crunch slows each chip down to the pace of a conversation, and the seasoning holds its savor to the last chew — kamu hodo umai, engineered this time by popular demand.
A limited release, a fan’s idea made real, and a very good reason to open something cold.
