Calbee Kataage Potato Chips Yuzu pepper

Yuzukoshō is one of the few Japanese condiments with no real equivalent anywhere.

It is made by pounding green yuzu zest together with green chillies and salt, then letting the mixture ferment — the citrus oil and the chilli heat merge into something sharper and more aromatic than either alone, and a very small amount transforms a dish.

It belongs to Kyushu, where it originated and where the best of it is still made, and the yuzukoshō in these chips is 100% Kyushu-produced.

What Calbee has done is let the two halves arrive separately.

The green yuzu hits the moment the bag opens — bright, floral, unmistakably citrus — and the green chilli builds as you chew, a prickling heat rather than a burn.

Sansho pepper and yuzu juice powder go in alongside to reinforce both ends.

Kataage means hard-fried, and that slow low-temperature frying is what makes a chip substantial enough to carry a condiment this assertive.

A thin crisp would surrender the seasoning immediately; a Kataage slice holds it across several bites, which is why Calbee returns to yuzukoshō each year as a seasonal flavour.

Calbee warns on the pack that these are genuinely hard — not suitable for children under four, and to chew thoroughly. 60 g to a bag.
