Calbee Pizza Potato Chips Mentaiko Mayonnaise

Mentai-mayo is one of the most reliable flavour combinations in modern Japanese cooking, and it works for a reason.

Mentaiko is pollock roe cured with chilli — a speciality of Fukuoka, salty and faintly spicy, with the fine granular texture of the roe itself — and mayonnaise, which in Japan is made with egg yolks alone and rice vinegar, is richer and tangier than its Western counterpart.

Together they appear on pasta, on rice, in bread and inside rice balls, the mayonnaise rounding the roe’s sharpness without flattening it.

Calbee puts that onto Pizza Potato, which is already a loaded chip.

Cheese flakes, cheese powder and aonori seaweed go on alongside the mentaiko powder and chilli, and powdered vinegar supplies the acidity mayonnaise would bring.

The description calls it yamitsuki nōkō — intensely rich, habit-forming.

Pizza Potato has been in production since 1992 and is among the most recognisable items in the Japanese crisp aisle, cut thick and wavy because a flat slice could not carry a topping this heavy.

A limited-period flavour at 57 g, with the colour coming from carotenoid and red yeast rice.
