Calbee Potato Chips Cho Usugiri Sour Cream Onion – Ultra-Thin Cut Sour Cream & Onion

Cho usugiri means “ultra-thin cut,” and Calbee means it literally: the potato slices in this bag are the thinnest the company makes — roughly half the pre-frying thickness of its Kataage chips, the thick-cut icons at the opposite pole of the same shelf.

Thinness this extreme took obsession to achieve.

The chip debuted in 2020 as “Thin Potato” after six years of development and hundreds of prototypes, requiring a frying technique new to Calbee and a switch to 100% sunflower oil to keep the fragile slices light and clean-tasting.

In 2024 it was rebranded under the flagship Potato Chips name as the Cho Usugiri series, and its texture has its own onomatopoeia: shaku-shaku, the delicate, rapid, almost lacy crispness of a chip with nearly no interior — the opposite of a crunch you chew through, a crispness that simply vanishes.

Sour Cream Onion is the series’ returning fan favorite.

First released for a limited run in February 2025, it won its audience on the balance of sour cream tang against onion sweetness; this 2026 edition keeps that balance but turns the sour cream up — more richness, brighter acidity — and slips in garlic as a hidden ingredient, giving the finish the savory pull that keeps a hand moving back to the bag.

It is a flavor with real presence on a chip with almost no weight, which is exactly the trick: satisfaction without heft, built for warm weather and absent-minded emptying.
