Fujiya Country Ma’am Hitokuchi Lemon Cake Soft Cookies

Country Ma’am Hitokuchi Lemon Cake is Fujiya’s chocolate-chip cookie reworked as something else entirely: a moist lemon cookie enclosed in white chocolate, built to taste like a lemon cake.

That reference is specific in Japan — the lemon cake is a retro Showa-era confection, a small lemon-shaped sponge dipped in white chocolate, sold at neighbourhood bakeries for decades and recently rediscovered by a younger generation.

Fujiya is chasing that, not a generic citrus flavour.

Two ingredients do the work.

The lemon is Ōchō lemon purée from the Setouchi region — Ōchō is a district in Hiroshima on the Inland Sea, one of the areas that made Japan’s domestic lemon industry possible, warm and sheltered enough to ripen fruit most of the country cannot.

Candied lemon peel goes in as well, which is where the brighter, more aromatic edge comes from.

The salt is Yakatame salt, made on the Nagasaki coast, and it sits underneath the sweetness to keep the white chocolate from flattening out.

Country Ma’am has been Fujiya’s signature cookie since 1984, known for a texture the Japanese call shittori — soft and moist rather than crisp, baked so the centre stays yielding.

Hitokuchi means one bite, and at 8.5 g a piece these are smaller than the standard Country Ma’am, individually wrapped, seven to a pack at 44 kcal each.
