Rea chiizu is the Japanese name for an unbaked cheesecake — cream cheese set with gelatin rather than cooked, chilled until firm, with a lightness and a lactic tang that a baked cheesecake loses in the oven.
It is a staple of Japanese patisserie cases, and it is what Furuta is reproducing here in a biscuit.
Three dairy components do the work.
Natural cream cheese carries the tang, cream adds richness, and whey powder reinforces the lactic edge — with an acidulant to sharpen the whole thing, which is what keeps the flavour on the cheesecake side rather than sliding into plain butter biscuit.
The cookie itself is thin and light at 6.7 g a piece, baked rather than filled, so the cheese flavour is in the crumb itself.
Furuta Seika has made confectionery in Osaka since 1952 and is known in Japan for inexpensive, well-made biscuits and chocolates.
