Shimi choco means soaked chocolate, and that is how these are made.
Rather than coating the puff, Ginbis draws the chocolate into the body of it, so it sits inside the structure — which is why the snack can be shipped and stored at room temperature all year round, summer included, and why it does not melt onto your fingers.
For a chocolate product sold in a Japanese summer, that is not a small thing.
The puffs are star-shaped and made from corn grits with wholemeal wheat flour worked in, giving a toasted depth beneath the cocoa.
The chocolate itself carries cacao mass rather than cocoa butter alone.
Ginbis adds calcium at 33 mg a sachet and the wholemeal flour contributes 0.7 g of dietary fibre; the corn is segregated from genetically modified crops through the supply chain.
Ginbis has made biscuits in Japan since 1930 and is best known abroad for Tabekko Dobutsu.
This is the family pack: four sealed sachets of 22 g, 88 g in all, 126 kcal a sachet.
