The Niigata company built its reputation, among Japanese confectioners, on an unusual insistence on domestic rice, and here that means 100% Japanese mochi rice — the sticky, glutinous grain pounded for New Year’s — and almost nothing else.

The ingredient list is remarkably short, and the package says plainly what the salt is there to do: let the flavor of the mochi rice come through.

The result is the purest version of the line’s signature contrast.

Each stick fries up crisp and firm on the outside — kari’ — then crumbles soft and fine within — horohoro — and with only a light, clean salting on top, what you taste is the toasty, faintly sweet flavor of good rice itself, the way plain mochi tastes fragrant off the grill.

It is the most snackable and least sweet of the three, the one that pairs as easily with green tea as with a cold beer, and the one Japanese reviewers describe as impossible to stop eating precisely because it never tires the palate.
