Kabaya’s shaved ice gummy reproduces a texture, not just a flavour.
Kakigōri is Japanese shaved ice — fluffier and finer than a snow cone, built from a block shaved into ribbons and drenched in coloured syrup — and the problem with turning it into a gummy is that the whole appeal is how it crunches.
Kabaya’s answer was granulated sugar, in two different grain sizes: coarse crystals for a hard gari-gari crunch, finer ones for the lighter shari-shari.
The three flavours split along those lines.
Soda and lemon get the coarse grain and the harder bite; strawberry gets the fine grain and the softer, more granular one.
All three are the classic kakigōri syrups sold at Japanese festival stalls — the blue of melon soda, the yellow of lemon, the red of strawberry — and the gummies are coloured accordingly, from safflower, gardenia, red cabbage and paprika rather than synthetic dye.
Kabaya Foods has made confectionery in Okayama since 1946 and is one of the strongest names in the Japanese gummy market, behind Tough Gummy and the Shari-in Gummy line.
This is a 55 g bag of all three flavours mixed, with spore-forming lactic acid bacteria worked in, a common addition in Japanese gummies.
A seasonal product, reformulated and relaunched in March 2026.
