Kabaya Watermelon Gummy Candy

Kabaya’s watermelon gummy reproduces the fruit in miniature — flesh and rind both, moulded into a wedge shape with the two layers visible.

That shape is doing more than decoration: watermelon is the single most recognisable image of summer in Japan, sold by the half at every greengrocer from June, split open on beaches in the suikawari game where blindfolded players try to crack one with a stick.

Salt is the detail that makes the flavour work.

Japanese households salt watermelon before eating it, a habit built on the same logic as salted caramel — a small amount of salinity makes the sweetness read cleaner and the fruit taste more of itself.

Kabaya applies that to the gummy: a balanced sweet-tart watermelon flavour with salt tightening it up at the finish, which is also what keeps it from becoming cloying over a whole bag.

Lactic acid bacteria are worked in as well, a common addition in Japanese gummies.

Kabaya Foods has been making confectionery in Okayama since 1946, and gummies are among its strongest categories — the company is behind Tough Gummy and the Shari-in Gummy line, both fixtures of the Japanese gummy boom.

This is a 50 g bag. The product has been on Japanese shelves since 2005, with the recipe most recently reworked in March 2026 — twenty years is a long run for a seasonal novelty gummy, and it has outlasted most of them.
