Kameda Potapota Yaki Sweet Soy Sauce Rice Crackers

Potapota Yaki has been Kameda Seika’s most distinctly nostalgic product since its launch — a round, lightly puffed rice cracker coated in a sweet soy sauce glaze, simple in construction and specific in flavor in a way that makes it immediately recognizable to anyone who has eaten it before.

The name comes from the sound and image of sweet soy sauce being dripped — “pota pota” — onto the surface of each cracker, one drop at a time.

The manufacturing method is what gives the cracker its characteristic texture.

Kameda uses jet milling — an air-jet pulverization technique that grinds the rice into very fine particles — to produce a dough with a particular mouthfeel: thick enough to have substance, but light and saku-saku in a way that dissolves more readily than a denser rice cracker would.

The cracker is baked rather than fried, which keeps the flavor clean and the texture delicate.

The sweet soy sauce coating — satojouyu — is the defining element.

Sugar and soy sauce are applied to the surface of each cracker, where they caramelize lightly during baking to produce the characteristic sweet-then-salty flavor that the product is built around: sweetness arriving first, salt following through.

The coating is applied without chemical seasonings, and the overall flavor relies on the natural sweetness of sugar and the umami of soy sauce rather than added flavor enhancers.
