The Ume earns its through something more specifically Japanese than either: the refreshing acidity of Kishu Nanko ume as its base, with kombu added as a hidden flavor that spreads a faint umami throughout — a combination that Kameda describes as a taste you never tire of.
Kishu Nanko is the benchmark ume cultivar — grown in Wakayama Prefecture under conditions that produce the large, fleshy plum with the particular balance of acidity and fragrance that has made it Japan’s most prized variety for centuries.
Kameda uses it here in three forms simultaneously: ume-flavored seasoning establishes the overall plum character across the cracker; umesupowder contributes the bright, sharp acidity of the pickling liquid that gives umeboshi its characteristic sourness; ume flesh powder adds the deeper, rounder fruit character of the plum itself.
Together the three layers produce an ume flavor that is more complete and more genuinely plum-like than a single ingredient could achieve.
Beneath all of it, kombu extract powder works as the hidden accent that Kameda specifically identifies as the ingredient that elevates the whole seasoning — the glutamate-rich seaweed umami that prevents the acidity from reading as simply sour and gives the flavor a savory depth that keeps it interesting through the full pari-pari crunch and into the finish.
