Koikeya Pride Potato Chips 100% Koboreuni Shoyu

Uni is sea urchin roe, and it is the most expensive thing anyone has put on a potato chip.

What it gives is unlike any other seafood: a dense, custard-like sweetness with a mineral finish, closer to cream than to fish.

Koikeya pairs it with soy sauce from Munakata in Kyushu — 100% of the soy sauce in these potato chips comes from there — and the combination is the one Japanese restaurants use for uni over rice, the soy sauce giving the roe the salt and depth it needs.

Powdered egg yolk goes in alongside to carry the richness, which is how uni behaves in cooking: it needs fat to hold its flavour rather than letting it dissipate.

A flavoured oil and hydrolysed protein fill out the base beneath.

The bag carries Save the Sea, a Koikeya initiative tied to Munakata’s waters — the Munakata region’s sacred island of Okinoshima was inscribed on the UNESCO World Heritage list, and the sea around it supports both the shrine and the fishery.

The potatoes are 100% Japanese-grown and non-GMO.

Koikeya made Japan’s first domestically produced potato chips in 1962.
