Koikeya Pride Potato Chips Gold Style Shiawase No Kiwami Dashi

There is no salt in these potato chips at all.

Koikeya builds the entire flavour from dashi instead — kombu, bonito, dried sardine, shiitake, scallop and oyster, six sources of umami standing in for the one thing a potato chip is never made without.

The claim on the bag is that they taste as though salt were there, and the mechanism behind it is real: glutamate from the kombu and shiitake, inosinate from the bonito and sardine, succinate from the shellfish.

Those compounds multiply rather than add when combined, which is why a dashi tastes of more than its parts.

Each source brings something the others cannot.

Kombu gives the broad savoury base, bonito the aroma, niboshi sardine a deeper and slightly bitter weight, shiitake an earthy density, and the scallop and oyster a marine sweetness.

Chilli sits underneath for lift.
