Sriracha travels well.
The chilli-garlic sauce takes its name from Si Racha, a coastal town in eastern Thailand, and has spent the past two decades becoming a global condiment — the rooster bottle on American diner tables, the default heat in half the world’s fusion cooking.
Koikeya’s version brings it back toward its origins: chilli heat with a clean edge, garlic underneath, and the sweet-sour balance that separates real sriracha from generic hot sauce.
The build is closer to the Thai original than the American one.
Powdered vinegar supplies the sourness rather than a sweetened tomato base, and fish sauce powder goes in for the fermented depth that Southeast Asian cooking runs on — which is where the suppa-kara, sour-hot, in Koikeya’s description actually comes from.
The heat is present and sharp rather than lingering, and the sugar sits just behind it.
That seasoning needs a chip that can take it, which is what Pure Potato is for.
Koikeya uses 100% Japanese-grown non-GMO potatoes cut thick, fried so they break with a dry snap instead of shattering, and the extra substance keeps the potato audible under a seasoning this assertive.
A Thai sauce, a Japanese potato, and a Japanese company that has been making chips since 1962.
