Koikeya Suppa Mucho Potato Chips Refreshing Plum Large Size

Sourness is unusual in a large bag of crisps, which is what makes this one interesting.

A sharply acidic chip tends to wear out its welcome halfway through; Suppa Mucho Plum is built so it does not.

The sourness comes from umezu, the brine drawn off during the salting of Japanese plums, and that is a rounder, fruitier acidity than vinegar gives — it carries the plum’s own fragrance and a soft sweetness underneath, which is why you can work through 105 g of it without your palate giving up.

Ume is often translated as plum, but the fruit is closer to an apricot and is never eaten raw in Japan.

It is salted into umeboshi, the pickled plum at the centre of a bento box, sharp enough to make a first-timer flinch and beloved here for exactly that.

Koikeya adds a plum seasoning powder alongside the brine, and aosa seaweed underneath for a green, briny savouriness that gives the chip a floor to stand on.

The pink colour is anthocyanin, from the plum itself rather than synthetic dye.

Koikeya made Japan’s first mass-market bagged chips in 1962 and built the Mucho family as a pair — Kara Mucho for heat, Suppa Mucho for sourness.

The potatoes are 100% Japanese-grown and non-GMO. This is the 105 g bag: the size a Japanese household buys to put in a bowl rather than to finish alone, and the better value if the flavour suits you.

A 55 g version is also available.
