Suppa Mucho is Koikeya’s sour line, and jagauma binegā is its most straightforward expression — vinegar and salt, with nothing trying to be clever.
Suppai means sour and the brand name is a play on it; jaga-uma contracts jagaimo and umami, potato and savouriness.
Koikeya’s own pitch is the balance between three things: the rounded acidity of the vinegar, the potato’s own flavour, and the salt level holding them together.
Powdered vinegar supplies the sourness directly rather than through an acidulant alone, which gives it a fuller, less sharp edge than a straight citric-acid tang.
Behind it sit powdered soy sauce, hydrolysed protein and whey powder, building a savoury base that keeps the chip from reading as merely sour.
That combination of acid and umami is what Japanese snack makers have spent decades refining and what distinguishes this from a salt-and-vinegar crisp elsewhere.
The potatoes are 100% Japanese-grown and non-GMO, which Koikeya states on the pack.
The company produced Japan’s first mass-market bagged chips in 1962 and has built the Mucho family — Kara Mucho for heat, Suppa Mucho for sourness — into one of the longest-running snack brands here. 55 g to a bag.
