Maruichi Ajisai Jelly

Ajisai is the hydrangea, and in Japan it belongs to June — the flower that blooms through the rainy season, changing colour from pink through violet to blue depending on the acidity of the soil it grows in.

Maruichi has made a jelly sweet that borrows that progression, with pieces in the hydrangea’s own range of colours.

The jelly is set with kanten rather than gelatin.

Kanten is agar, extracted from seaweed and used in Japanese confectionery for centuries, and it behaves differently from gelatin: it sets firmer, holds its shape at room temperature, and breaks cleanly rather than melting on the tongue.

It also means this sweet contains no animal products at all — the ingredient list runs to starch syrup, sugar, glucose, agar and starch, and nothing else before the additives.

Maruichi Seika is a small confectioner in Ōgaki, Gifu Prefecture, working in the dagashi tradition of inexpensive sweets sold loose and individually wrapped.
