Matsunaga Shiruko Sand Biscuits Matcha

Matcha and azuki is the most established pairing in Japanese confectionery, and Shiruko Sand Matcha is what happens when it meets a biscuit.

The combination appears everywhere here — matcha parfaits built on sweet bean paste, matcha ice cream with azuki spooned over it, the bowl of thin tea served alongside a wagashi in a tea ceremony — and the logic is that matcha’s astringency cuts the bean paste’s sweetness rather than competing with it.

Matsunaga Seika works the matcha into the biscuit dough and leaves the azuki paste in the middle, so the two meet on the bite rather than being blended together.

That structure suits Shiruko Sand particularly well.

The founder reduced the original’s sweetness deliberately — his stated wish was that people should be able to eat their fill — and the dough already carries salt as part of the design.

Matcha adds a third element to that balance: bitter against sweet against salty, in a biscuit roughly the size of a postage stamp.

Matsunaga Seika has been making Shiruko Sand in Komaki, Aichi, since 1966, and in that prefecture the product is in every supermarket.

The seasonal flavours rotate through the year, with matcha and sakura arriving together in February. 60 g to a bag.
