Morinaga specifies rock salt from Lorraine, the region in northeastern France where salt has been extracted since Roman times and where the deposits sit deep underground rather than being evaporated from seawater.
Rock salt of that kind is mineral-rich and comparatively mild, with a slower, rounder salinity than sea salt gives, and that is what makes it usable in a biscuit rather than merely on one.
Morinaga works it into the galette itself.
The pairing it serves is salty lemon, which has become a fixed flavour category in Japan over the past decade — bottled shio lemon drinks, salted lemon sours, lemon sorbet finished with salt.
The logic is the same one behind salt on a slice of watermelon: a small amount of salinity makes acidity read as brighter and sweetness as cleaner.
Here the salted galette encloses a sweet-tart lemon cream, and the two work against each other rather than layering — the biscuit is savoury-edged and toasty, the filling sharp.
Morinaga describes the result as karoyaka, light-footed, and positions it explicitly as an early-summer product for when heavy sweets stop appealing.
The galette is the same saku-horo construction Morinaga uses across this format: a thin, buttery, flat biscuit that gives crisply and then crumbles rather than snapping.
