Languly is Mr. Ito’s langues de chat sandwich cookie — two thin, crisp wafers made from langues de chat dough with a chocolate cream filling in between.
The name is a contraction of “langue” and “languly,” and the format is one that Ito Biscuits has been refining since the company’s early years.
The dough is made using what Ito Biscuits calls the “two-stage egg mixing method” — an original technique in which eggs are added and mixed in two separate stages rather than all at once.
The additional mixing time produces a finer, more uniform crumb structure than a single incorporation would achieve, and a texture that is noticeably lighter and more delicate as a result.
The edges of each wafer develop a characteristic brown edge during baking — a slight caramelization at the rim that Ito Biscuits describes as the sign of a correctly baked langues de chat, and a visual marker of the quality of the bake.
The sugar used in the dough is beet sugar from Hokkaido — a variety with a clean, mild sweetness that the company chooses specifically for how it behaves in a thin biscuit at high heat.
The chocolate cream filling is smooth and properly chocolatey, made with cacao mass and full-fat milk powder rather than a simple cocoa powder base, sandwiched between the two wafers in an amount calibrated to complement rather than overwhelm them.
Twelve pieces in four individually wrapped trays of three — a format that makes portion control possible in theory, and somewhat difficult in practice.
