The Strawberry Tart is the original version of Mr. Ito’s tart cookie lineup — the one that established the format before the Blueberry variety joined it.

The construction is the same: a custard-flavored tart shell made with egg, sweetened condensed milk, and cheese powder, baked in a flower shape and then filled using the After Depot method — jam applied after baking rather than before, preserving the fresh, juicy character of the fruit.

Where the Blueberry version is rounded and slightly earthy, the strawberry jam delivers something brighter and more immediately sweet — the clean, sun-ripened tartness of strawberry that sits closer to the surface and comes through more directly on first bite.

The jam is colored a vivid pink from red koji pigment, which makes the filling visually distinct from the pale shell before the flavors have a chance to arrive.

After the jam is applied, each piece rests for five days before shipping — long enough for the jam and the tart shell to integrate fully, the shell softening slightly as it absorbs the jam’s moisture.
