Nagoya’s tebasaki — chicken wings marinated in a sweet-spicy soy-based sauce and fried until the skin crisps and caramelizes — is one of the most recognizable dishes in Aichi Prefecture’s food culture, and one of the defining flavors of the region.

This limited-edition Dodekai Ramen takes that flavor as its starting point: the savory depth of chicken, a sauce with the rounded sweetness and soy umami of the classic tebasaki glaze, and the spicy kick that makes the original impossible to stop eating.

The seasoning is built on sweet-spicy sauce powder, chicken wing flavor powder, chicken extract, and garlic powder — the combination that produces the layered, slightly sticky-sweet quality of tebasaki without losing the heat that runs underneath.

The spice builds gradually rather than arriving all at once, which is precisely how a good tebasaki works: the first bite leads inevitably to the next.

This is one of two limited-edition flavors released as licensed merchandise for the NHK historical drama “Toyotomi Brothers!” — a series set in the world of Toyotomi Hideyoshi, whose early years were spent in what is now Aichi Prefecture.

The Aichi Chicken Wings flavor pairs with the Osaka Okonomiyaki version, each representing the regional food culture of a different city in the drama’s setting. A limited run representing one of Japan’s great regional food cultures in snack form.
