It is the seasoning that transformed the potato chip into something the Japanese made their own, and it is the flavor that Riska spent five years figuring out how to bring properly to Umaibo. The result, when it finally arrived in 2020, was worth the wait.
What makes this Umaibo different from the others begins before the seasoning.
The base itself has been rethought: dried potato is worked directly into the corn dough, creating a hybrid that carries more substance and a subtly different texture than a standard Umaibo — closer, in its way, to the potato chip experience it is reaching toward, while remaining unmistakably the light, airy stick that has defined the line since 1979.
On that foundation, the seaweed arrives in two forms. Aosa — the fine, delicate green seaweed with a fresh, oceanic character — comes first, bright and immediate.
Roasted nori, the roasted seaweed that delivers a deeper, more concentrated marine flavor, follows behind it, adding the kind of toasty complexity that keeps the seasoning interesting past the first bite.
Kombu powder works quietly beneath both, extending the umami base without calling attention to itself. Salt ties everything together with the clean, simple authority that nori shio has always relied upon.
The official description puts it plainly: an Umaibo finished with the full fragrance of aosa and roasted nori. Some descriptions are just accurate.
