Sanko Seika Tsukitate Mix Assorted Rice Crackers

Tsukitate Mix is an assortment of okaki and senbei sold deliberately unsorted.

Musenbetsu — unselected — is the term, and it means the bag is filled without grading the pieces for uniform size or shape, so what comes out is a jumble of sizes, thicknesses and flavours.

In Japan this is a recognised category rather than a defect: unsorted bags cost less and are prized for exactly the variety that sorting would remove.

What that gets you here is a genuine range.

Soy sauce, salt, cheese, seaweed, green pea, ume plum and shiso, edamame, kinako, shrimp — the ingredient list runs to more than twenty items because each component in the bag has its own seasoning.

Black soybeans are baked into some of the crackers whole.

Rice crackers vary enormously in texture depending on whether they are fried or baked and whether glutinous or ordinary rice is used, and an assortment like this covers most of that ground in one bag.

Sanko Seika is a Niigata company and one of Japan’s largest rice-cracker makers, behind Yuki no Yado and Parinko among others.

The 200 g bag is resealable, which matters for rice crackers — they take on humidity quickly once opened.
