Yamazaki Noir Brown Butter Cream Sandwich Cookies

This special edition Noir was created in collaboration with Koga City in Ibaraki Prefecture — home to the one and only factory in Japan where Noir and other Yamazaki Biscuit products are made. It pays tribute to that local heritage with a filling inspired by the city’s character: a kogashi bata (brown butter) cream that’s fragrant, deep-flavored, and unmistakably grown-up.

Brown butter — butter cooked until the milk solids caramelize and turn golden — brings a toasty, nutty richness that plain butter simply cannot match.
