Awase dashi — the combined stock made from katsuobushi (dried bonito flakes) and kombu (dried kelp) — is considered to have originated in Osaka, where the city’s role as Japan’s historical trading center brought both ingredients together in the same kitchen.
It is the foundation of Kansai-style cooking: lighter in color than the soy-forward stocks of the east, more nuanced in flavor, and defined by the interplay between the clean umami of bonito and the slower, deeper umami of kombu.
Calbee’s Kansai Ajiroman Dashi Salt puts that specific flavor on a potato chip.
The seasoning is built on katsuobushi extract powder, kombu powder, and kombu extract powder — the same three ingredients that define awase dashi in the kitchen, reproduced here as dry seasoning.
The kombu powder uses 100% Hokkaido-grown kombu, from the cold, mineral-rich waters of Japan’s northernmost major island where the best kombu has been harvested for centuries.
Salt is applied lightly — the point is not saltiness but the way salt elevates the dashi flavor underneath it, which is how Kansai-style seasoning tends to work.
The flavor is clean and deeply savory without being assertive.
The bonito note arrives first, with the kombu’s slower, more mineral umami following through as you finish the chip.
